I love to make my Chilli Con Carne from scratch. That means I make my own chilli powder, dried beans and frank steak not ground beef.

Chillie Powder


2 Tbsp. Sweet Paprika
1 Tbsp. oregano
1 tsp. Cayenne
1 tsp. Cumin

How to

Put the lot in a bullet or spice grinder and process into a fine powder

Note: If you are unlike me and are not allergic to garlic and have no plans to invite to imbibe in yours, you can add 1 tsp. garlic powder


Chilli Con Carne

2 cups Dried Pinto beans
1 Tbsp. Kosher Salt
1 lbs Flank Steak
1 medium Sweet Onio
1 Jalapeno Pepper
4 Roma, Plum  or Compari Tomatoes
2-3 tsp. Chilli Powder
Chipotle to taste

How to

The Night Before

Place dried bean in a ceramic pot awith 1 Tbsp. Kosher salt

Add 4 to 5 cups of boiling water

Let Stand Over night

Score Both Sides of the Flank Steak

Rub in juice of 1/2 a lime and 1 tsp. of Cillie Powder. Repeat on other side. Refrigerate Overnight


The Day Of

Pre-heat over to 250F or 275F

Dice Onion, Remove seeds from a part of the Jalapeno Pepper and dice.

Add 1 Tbsp. olive oil to a pan and heat onion and jalapeno pepper until onion is translucent

Dice Tomatoes.

Add Tomatoes and Onion To Pot

Cut Flank Steak into 1/2 inch cubes

Add to frying pan and brown. then add to pot.

Deglaze pon with one cup of boiling water and add liquit to pot.

Place covered pot in center of oven and bake for 3 hours

After the first 3 hours, check and adjust seasoning. Increase temperature to 350F and Bake aother 2 hours or until the desired consistency is reached.
