What could be better than sharing a pizza with your best friend? It’s a rhetorical question, no answer required!

The What

  • 2 – 2 ½ cups flour divided
  • 1/2 cup warm water divided
  • 1 tbs sugar
  • 1 tbs dry yeast
  • 3 tbs olive oil divided
  • Cracked pepper to taste
  • ½ tbsp kosher salt
  • 2 cups cherry tomatoes
  • 3-4 slices prosciutto
  • 9 black olives
  • 2 tbs grated Parmesan  cheese
  • Shredded Mozzarella cheese to taste

 

 

The How

  1. Set oven to proof (if you don’t have a proof setting set to 340, and pre heat 3 minutes and turn off)
  2. Add 1cup flour to food processor
  3. Make a well with a spoon in the flour
  4. Pour ¼ cup of warm water in well
  5. Add 1 tbs sugar to well
  6. Add 1 tbs dry yeast to well
  7. Let sit 5-10 minutes until yeast is foaming
  8. Process mixture for 1 minute
  9. Add ¼ water process 1 more minute
  10. Add flour a tbs at a time while processing until dough ball forms
  11. Place in a floured bowl, cover with wrap and put in  oven for 2 hours
  12. Heat a cast iron pan, or equivalent, to high
  13. Add cracked pepper, salt at cherry tomatoes
  14. Roast on high until tomatoes start to blacken and peel
  15. Reduce heat to low and cook 10 minutes, pressing down on tomatoes with a wooden spoon
  16. Remove form heat and let cool completely
  17. Preheat oven to 450 F
  18. When ready, remove dough from bowl and knead in more flour as required
  19. Place dough between two sheets of floured parchment paper and roll out to a thin oval or round shape
  20. Place dough on a non-stick baking sheet
  21. Spread tomatoe sauce over dough
  22. Brush edge of dough with olive oil
  23. Add your favorite ingredients, like prsciutto, olives, Parmesan and basil
  24. Cover with shredded mozzarella to taste
  25. Bake a 450 F for 10-12 minutes
