The What
- 2 – 2 ½ cups flour divided
- 1/2 cup warm water divided
- 1 tbs sugar
- 1 tbs dry yeast
- 3 tbs olive oil divided
- Cracked pepper to taste
- ½ tbsp kosher salt
- 2 cups cherry tomatoes
- 3-4 slices prosciutto
- 9 black olives
- 2 tbs grated Parmesan cheese
- Shredded Mozzarella cheese to taste
The How
- Set oven to proof (if you don’t have a proof setting set to 340, and pre heat 3 minutes and turn off)
- Add 1cup flour to food processor
- Make a well with a spoon in the flour
- Pour ¼ cup of warm water in well
- Add 1 tbs sugar to well
- Add 1 tbs dry yeast to well
- Let sit 5-10 minutes until yeast is foaming
- Process mixture for 1 minute
- Add ¼ water process 1 more minute
- Add flour a tbs at a time while processing until dough ball forms
- Place in a floured bowl, cover with wrap and put in oven for 2 hours
- Heat a cast iron pan, or equivalent, to high
- Add cracked pepper, salt at cherry tomatoes
- Roast on high until tomatoes start to blacken and peel
- Reduce heat to low and cook 10 minutes, pressing down on tomatoes with a wooden spoon
- Remove form heat and let cool completely
- Preheat oven to 450 F
- When ready, remove dough from bowl and knead in more flour as required
- Place dough between two sheets of floured parchment paper and roll out to a thin oval or round shape
- Place dough on a non-stick baking sheet
- Spread tomatoe sauce over dough
- Brush edge of dough with olive oil
- Add your favorite ingredients, like prsciutto, olives, Parmesan and basil
- Cover with shredded mozzarella to taste
- Bake a 450 F for 10-12 minutes
